Hoi An Chicken Rice Recipe

- 1 whole chicken
- 1 clove of garlic, minced
- 1 lime
- Finely chopped Vietnamese mint.
- Salt and pepper to taste.
- 3 tomatoes, thinly sliced

- 1 teaspoon turmeric
- 2 cup uncooked white rice
- 1/4 cup uncooked sticky rice
- 1 white onion, thinly sliced, marinated with 1 teaspoon sugar, 1 teaspoon fish sauce, and 1 teaspoon vinegar.
For coating sauce, we use 1 teaspoon fish sauce, 1 teaspoon sugar, and 1 teaspoon lime juice. We have to mix them all together, add in 1/8 cup water and chili if desired.
How to cook it
Clean the chicken, lightly rub with a little salt and lemon to deodorize, wash. Using fresh old turmeric pounded, lightly rubbed on the skin will help the chicken when boiled to have naturally golden.
Place the chicken in a deep pot, add cold water to cover the chicken. Add crushed ginger, dried onion, and bring to a boil. When the water boils, lower the heat to remove the foam and keep boiling with the low heat.
After 5-7 minutes turn off the heat, soak the chicken for 15-20 minutes depending on the weight. This will both help the chicken to be more succulent, sweeter, and more fragrant. At the same time will help keep the chicken from turning red.
When the water is a bit cold, take the chicken out, take a damp towel to cover the chicken, it will help the skin smoother. Want more yellow skin, you should use hot chicken fat mixed with turmeric powder, apply it evenly on the skin.
